Making your own homemade energy bars can be as simple or complicated as you want, and this recipe is as simple as it gets. A few ingredients, your trusty food processor, and a few minutes in the fridge to firm up, and you’ll have a snack you can enjoy at home or on the go.

INGREDIENTS
200g medjool dates (pitted)
150g regular dates (pitted)
200g cashews
100g choc chips

METHOD
1. Crush cashews in a sandwich bag using a rolling pin
2. Blitz dates in a food processor, then add in the cashews and chocolate chips – and blitz again
3. Spread the mixture in a shallow baking tin lined with greaseproof paper, condensing it as much as possible to prevent it from crumbling later. Chill in the fridge for 20 minutes.
4. Cut and serve 🙂
