I really like this article. It really hits home with me as in the past I had always struggled to say no to people. The steps outline a process for getting to no that is ethically sound for both you and the party you are saying no to. I particularly like the advice of not making up lie, as this will only mean you have to remember the reason you said no if you meet up again another time again this is awkward to say the least.
